I recommend you get the 30" tall inflatable mattress from Bed Bath and Beyond. They inflate and de-flate quickly.
I have built in shelves above my wheel wells that I made in about a months time in between loads. I keep crackers, cookies, pop and tools handy.
I mounted fans and insulated my roof to keep me cooler in the summer without having to run my a/c.
Laptop in your console is handy if you have one to get direction, email and pay bills online.
I have a DVD player installed under my seat.
I have a small microwave hard wired into my system.
Sleeping bags, bed rolls, a 1500 watt heater, t.v. and vcr keeps me busy. I power my equipment with a 5,000 watt inverter, which was expensive but worth it.
I keep a shelf by the passenger dash that swivels where I can type into my laptop program to get directions. It keeps it off the floor and out of harms way.
I built shelves on the inside of my van for can goods, etc. Make sure you don't go past the wheel wells though so you are not short changing your freight room.
